Would be possible to use Paint-by-Example with the diffusers/stable-diffusion-xl-1.0-inpainting-0.1?

For the future users come here, I think PBE would not be applicable to SDXL because according to PBE paper authors used Stable Diffusion 1.4 as a base model not SDXL.
